1) Tell us your story. How did your own journey with Celiac Disease inspire you to create your food blog?
When I was diagnosed with celiac disease, there were few outlets for those living with celiac disease. Because of this, I created “Glutenfreegalpal”. Because of Glutenfreegalpal, I have been introduced to as many different brands and restaurants and have made so many news friends on this journey so I am very thankful for the gluten free community.
2) Restaurants and grocery stores are becoming more gluten-free and gluten friendly, which is fantastic. What are some changes they have made/are making that you are looking forward to?
Restaurants and brands have come a long way. The transparency on whether a product is gluten free has definitely increased, but there is still room for growth. Living a gluten free lifestyle has become more common so restaurants are picking up on this as well, but they need to recognize the difference between gluten free safe and celiac safe.
3) What are some things to keep in mind when dining with gluten free friends?
The impact that living a gluten free life has on someone does not just affect their physical being, but their emotional, financial, and social wellbeing. Living with any disorder is not easy so it’s important to realize how much it can change ones life.
4) As the platform for women dreamers, what is your next big dream?
Expanding my brand and being able to be a voice in the in the gluten free community.
Cheesecake Stuffed Apples- A Must Try Gluten Free Dessert
Ingredients:
4 tbsp. melted butter
2 tbsp. brown sugar
1 tsp. cinnamon
4 apples, tops sliced, insides scooped
2 blocks cream cheese, softened
1/2 c powdered sugar
1/2 tsp. vanilla extract
Directions:
1. Preheat oven to 400 degrees F. In a small bowl, mix together melted butter, brown sugar, and cinnamon.
2. Place apples in a baking dish and brush on apples. Bake 20 minutes.
3. In a large bowl, beat cream cheese, sugar, and vanilla until creamy. Spoon mixture into stuffed apples and bake 10 minutes more.
4. Optional- garnish apples with graham crackers (I have Kinnikinnick Foods S’moreables Graham Crackers).
5. Let sit for 5 minutes as apples will be hot. Enjoy!
